El Salvador Finca El Izotal is a very special, limited edition, single-origin coffee. Grown at 1600 masl in the Alotepec-Metapan Mountain Range, these award-winning beans are from the Las Nubes (the clouds) lot on the El Izotal farm. Unlike natural processed or washed coffees, this coffee is red honey processed which means that the coffee cherries are slowly dried, on raised bed in the shade, with some of the fruit flesh (mucilage) still on. This mucilage is extremely sweet and sticky like honey, which is why it was named Honey Process. During the drying, humidity, heat and the oxidation of sugar all affect the honey processing. This slower process results in a very full-bodied cup with unique sweet notes.
We purchased this coffee through the BioKrop project by Tierra Bendita. BioKrop is a consortium of specialty coffee farms in El Salvador with the goal of streamlining green coffee sales to be direct from "root to roaster". These farms all share the same principles of agroecology and biodynamic growing practices, with focus on soil recovery and water conservation. As part of this project, El Izotal receives assistance prior and post-harvest to help maintain healthy plants and improve the fermentation and drying process.
This Las Nubes microlot was a top 5 finalist at last year’s Trifinio competition (Best of Guatemala, Honduras, and El Salvador)
